כחלק מפעילות IPEVO הוקמה ועדה מקצועית שמטרתה לשרטט מפה הסברתית של אזורי היין השונים של ארץ ישראל.
ועדה זו כללה מספר חברים מיקבים שונים, אזורים שונים בארץ והיא לוותה על ידי גיאוגרף ואנשי מקצוע שונים לאורך פעילותה.
לאחר תהליך ארוך ויסודי הוצגה להערות טיוטת מפה, הוחזרה לעדכונים ובסופו של תהליך סדור ומקצועי אושרה על ידי כלל חברי הארגון כמפה ההסברתית הרשמית של ארגון ה-IPEVO, והיא מייצגת נאמנה את אזורי היין של ארץ ישראל נכון לשנת 2019.

Dr. Jamie Goode
Based in London, Jamie Goode is a lapsed scientist who now devotes his time to writing about wine, mainly in the UK national newspaper the Sunday Express, and on his own site, wineanorak.com. The author of The Science of Wine (UC Press 2014) and I Taste Red (2016).
Manuela Brando
Research and Development Director of DBR Lafite, Manuela is an agricultural engineer from AgroParisTech and enologist from Montpellier SupAgro.
She has been working in DBR Lafite since 2014, first working in the properties outside Bordeaux (Long Dai, Los Vascos, Caro, Aussières) , before creating the R&D department in 2016 for all the estates of the group. The R&D team helps the group in its conversion to organic farming, agro-ecological reflection, adaptation to climate change, among others subjects.
Today Manuela is doing a PhD thesis on the effects of biodynamic preparations on plant and grape physiology
Dr. Valérie Lavigne
University of Bordeaux Institute of Vine and Sciences
Valérie Lavigne is a well-respected global consultant in viticulture and oenology. Based in Bordeaux, she is a researcher for Seguin-Moreau, affiliated with the Institute of Vine and Wine Sciences (I.S.V.V.). Her primary areas of research include: aroma science; reduction during vinification and aging of white wines; and premature aging of aromas in white and red wines.
Additionally, for over 20 years, she worked alongside the legendary winemaker and professor Denis Dubourdieu, renowned for his research on Sauvignon Blanc and advanced winemaking techniques.
Her work has resulted in more than thirty publications in international scientific journals as well as presentations at numerous conferences. She has also contributed to numerous seminal reference publications, including White wines, from marketing to vinification (FRANCE AGRICOLE), Oenology treatises (volumes I and II, translated into English, Spanish, Italian) and The Oxford Companion to Wine (Fourth Edition, Jancis Robinson ed.).
Valérie Lavigne is also a consulting oenologist for about 70 crus and renowned estates in France, Spain, Italy, Greece, Portugal and South Africa. She teaches diploma level courses at the University of Bordeaux along with white wine aroma training courses for the Bordeaux CIVB.
Valérie Lavigne graduated from the University of Bordeaux with honors and was the recipient of the Grand Prix of the AMORIM Academy honoring the work of young researchers who have contributed to improving the knowledge and quality of wine.
Victor Schoenfeld
Victor Schoenfeld has been Golan Heights Winery's Head Winemaker since 1992. His previous experience includes work in the Carneros, Dry Creek Valley, Napa Valley, Sonoma Valley and Champagne, France. He completed his degree in Enology (Fermentation Science) at the University of California, Davis in 1988.
Eran Pick MW
Eran completed his B.S degree in Viticulture and Enology at the University of California, Davis. He is a Master of Wine since 2016. Pick joined Tzora Vineyards’ team as a winemaker in 2006, following a few training periods at wineries in Napa, Sonoma, Barossa and Bordeaux.
Andrey Shulik
Andrey works at Tzora Vineyards since 2019. He completed his M.Sc in Viticulture and Enology at the Hebrew University, Agriculture Department. Andrey was selected to be the project manager of the IPEVO Terroir booklet.
Noa Maoz
Noa is a part of the Israeli wine industry for the last 20 years. With a B.Sc. in Environmental Studies and a M.Sc. in Viticulture she has been guiding and consulting to growers and wineries in the premium section of winegrowing. Noa also promotes sustainable and regenerative winegrowing including the use of integrated pest management (IPM), nutrition and soil fertility.
In the last year Noa has also joined the Israeli Wine Grape Board and has been promoting national projects within Viticulture challenges.

Itay Lahat
Wine and wine-making has been in the center of Itay Lahat's life since 1995. He is a viticulturist and winemaker who graduated in Horticulture at The Hebrew University of Jerusalem and in Viticulture and Oenology at Adelaide University in South Australia. He also has an MBA degree from The Hebrew University in Jerusalem. Itay is the owner and winemaker of Lahat Wines, crafting blends of Rhone grape varieties in the Israeli Upper Western Galilee wine region.
Ido Lewinsohn MW
Ido studied viticulture and enology in Italy, interned at San Guido's Sassicaia and worked in Italy, France and Australia. He returned to Israel in 2007 to become a winemaker, and in time Head Winemaker of Recanati Winery. That same year, he established Lewinsohn Winery in his family's garage, where he produces his 'Garage de Papa' wines.
In 2017, Ido was appointed Head Winemaker of Barkan - Segal Wine Cellars.
He is a Master of Wine since 2020.
Micha Vaadia – winemaker/grower.
Micha completed his B.S degree in Agriculture at the Hebrew University of Jerusalem in 1995 and a M.Sc. in Enology and Viticulture, UC DAVIS CA USA in 1997. He has worked in winemaking positions in wineries around the world (J vineyards and winery CA / Navarro vineyards and winery CA / Cloudy Bay NZ / Catena Zapata Arg / Golan heights IL ). Micha has been the Chief winemaker at Galil Mountain Winery since 2006.
He is passionate about regenerative wine growing and has been developing and implementing practices over the last several years.
Maayan Chai
Ma'ayan has a B.sc in Biotechnology and a M.sc in VIticulture and Oenology from Adelaide University in Australia. She has experience as a winemaker and viticulturist for the past 15 years, both in wineries and as a consultant. Maayan is a great advocate of regenerative sustainable agriculture, promoting and guiding growers in practical vineyard management, considering soil and weed management, vine growth, pest management and resulting wine.
Ari Erle
Ari studied winemaking at Napa Valley College and UC Davis and worked at and built some of the most sought after, cult wineries in Napa Valley. When he returned to Israel in 2010, he planted vineyards, and built several boutique wineries (Bat Shlomo Vineyards, Jezreel Valley Winery, Covenant Israel, plus more). He also taught winemaking at Ohalo College. Ari specializes in growing sustainable vineyards in hot climates and is especially interested in Israeli Indigenous Varieties. 2022 was Ari’s 18th Harvest!
